makes a loaf!
ingredients
- 500g bread flour (~4 cups + a little more)
- 300g water (~1¼ cups)
- 30g olive oil (~1 Tbsp)
- 3½g yeast (~1 tsp)
- 5-10g salt (~1 to 2 tsp)
instructions
- Stir dry ingredients together
- Add water and olive oil. Stir together and work into a ball.
- Knead until smooth and elastic (about 10 minutes)

Cover and let rest until dough doubles in size
(usually about 1 hour, sometimes longer if it's cold)
- Punch down, form into shape

Let rest about 45 minutes to an hour.
Be careful not to overproof!
Dough should be risen but still firm.
Should spring back when you poke it. Springy!
- Score dough and put in oven at 500°F for 30 minutes
- Remove bread from oven and let cool a while before cutting
Included rough volume measurements for when we don't have a kitchen scale on hand.
I also included salt on the ingredients list for completeness, but I usually leave it out because I'm low sodium.
